10 lb belly cut into fourths. Sprinkled with kosher salt, coarse black pepper and rubbed with generous amount of dark brown sugar. Vacuum seal and let cure in the fridge for 2 weeks.
Build a good hickory fire in the smoker.
Start smoking @ 175 f ±.
Hour and a half later.
Let cool, cut into smaller hunks, vacuum seal and freeze. Slice while still cold and fry.
