I didn’t make these tonight, but make them on a regular basis. Picture out of order. The last one where they are on the tray on table is prior to baking. First, cut on half and remove seeds. Par cook in skillet in a little oil and salt til the skin blisters or they won’t fully cook in oven before cheese get bubbly and browned. (I use pepper jack and add a touch of cayenne, paprika, etc to taste.

Well it was last night but forgot to take picture(s).

Korean BBQ inspired pork jerky (1 of 3 bags worth) :drooling_face:

Wait, pork jerky? Any special accommodations necessary for pork versus beef, venison, or fish? If I can make jerky out of pigs, I’m going to have lots more jerky to give away.

This was store bought, but I’m going to start cutting the loins out of every not stinking to high heaven oinker I shoot now even if it is a big old boar. It’s the perfect cut and using a wild source would require much less if any fat trimming.

I threw it in the freezer for a couple weeks as that’s supposed to be enough to kill off trichinosis and did it in my air fryer and surely got the internal temperature over 165 for good measure.

LOL neither have I. This is a new project for us. My wife boiled 5 gal. Of sap down to 2 qts and it still is not finished. We are collecting more to boil down before she finishes it all together.
