I smoked a Boston butt over the weekend. My wife took the leftovers and added them to Palmetto Cheese (a brand of pimento cheese for you non South Carolinians), wrapped them in egg roll wrappers and fried them up. Served with some Sweet Baby Ray’s Golden Mustard sauce.
