Does anyone know if the JMAC Customs side-folding buffer tube adapter works on the AK-102?

PSA uses 4.5mm pins so make sure it one that works with that.

JMac Customs says it’s compatible with the -103, -104, and -105, but says nothing about the -101 or the -102. Does PSA use 4.5mm pins for all of their side-folders?

Does any company make a retractable M4 style buttstock that latches on a side folder catch?
Not that i am aware of. Most side folders with a m4 stock have a locking mechanism in the folder, such as a push button.
I have the magpul Zhukov stock that has the locking mechanism but my only concern is that the mechanism, which is basically a detent that goes into a V-notch, will wear out easily
