Will a 6.5 upper work with a .308 lower

It will if it’s the same brand of receiver. The AR10 platform is non standardized so, not all receivers will work together and nobody knows which ones will work and ones that don’t. Its best to stick with same brand of manufacturer so you don’t run into compatibility problems but there are some brands that you can mix together.
While AR10 may not be standardized in reality pretty much all consumer AR10’s run on the DPMS pattern(which PSA now owns). Knights and a couple of other super expensive military suppliers still use the Armalite pattern but that’s it.

I’m a beginner with AR-10’s myself. I want to get into that realm but not really sure where to start.
You can’t go wrong with a PA10 kit. I’m a rifle length guy myself but the 18" mid-length is ok too.
I strongly suggest using a PSA upper on your PSA lower.
There are a lot of subtle differences between even the DPMS pattern Large Frames sold.
Remember, there are no “Mil-Spec” guidelines for Large Frame AR’s
welcome aboard. I’d start with a PSA AR10 build kit if you want to build one. If you just want one built then go with a PSA Ar10 prebuilt.
