nice line up…the thing I like about the pork is that it is very easy to do…not temperamental like a brisket…you don’t have to baby sit it.

I made Jägerschnitzel with peppers, onions,mushrooms, and gravy.
Pork loin,trimmed fat, pounded out (under plastic wrap to keep mess down per wife!)
with organic garlic powder,flour,egg,bread crumbs,fried @360f
Drained on paper towels.
Then dry paned the mushrooms separately and then added some butter and black pepper and thyme. For the gravy I made a roux with butter,flour and minced onion.cooked till golden and added beef broth and bone broth and a little salt and pepper. Not bad for an Irish Italian!

I’ve only had spaetzle once in a little German restaurant in Helen Georgia and it was wonderful with the schnitzel.
